These cookies are great for snack or after school pick-me-up. Made with wholesome ingredients like coconut oil, banana, & whole grains. Also low in sugar!
Ingredients
- 1 ripe banana
- 1/2 cup coconut oil (may be butter flavored)
- 2 eggs
- 1 tsp. vanilla
- 1/4 cup granulated stevia
- 1/4 cup brown sugar
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 cups quick oats
- 1 cup whole wheat flour
- 1/4 cup chocolate chips
Directions
Preheat oven to 375 degrees. Blend together banana and coconut oil until smooth in a large food processor. Add eggs, vanilla, stevia, and brown sugar. Blend. Add baking soda, salt, quick oats, whole wheat flour. Mix until combined. Stir in chocolate chips. Scoop dough into small round balls and place on cookie sheet lined with parchment paper. Bake at 375 degrees for 10 minutes. Let cool for 2 minutes then remove from cookie sheet to a wire rack to finish cooling.
